Chicken 65 Recipe

Here is a recreation of Chicken 65, a very tasty bar snack that we had at the hotel in Bogmalo, India:

Marinate the following ingredients for 1-12 hours:

1 lb bite-sized boneless chicken thighs
4-5 cloves garlic, crushed
1 inch fresh ginger, peeled and crushed
1/4 tsp red chili powder
1/2 lemon's juice
salt

Mix into the chicken:

1 egg, beaten
2-3 heaping tablespoons flour

Fry the following until the mustard seeds start to pop:

2 tsp mustard seed
1 small dried red chili, crushed
1-2 tbsp butter

Add some canola or other light oil and then the chicken mixture. Fry this until done and brown.

Add the following and reduce the sauce until almost dry:

24 fresh curry leaves
1 cup yogurt

Serve immediately. Serves 2-6 people, but it's very good so often disappears rapidly.

Optional ingredients that we have seen listed in some recipes for Chicken 65: Coconut milk (probably very good), ketchup, black pepper, cilantro, tandoori red food color (yuck), 50/50 corn/wheat flour instead of regular flour, citric acid instead of lemon juice, buttermilk instead of yogurt.
